 Fall and winter is all about festivities and enjoying others’ company. With football Sundays and holiday get-togethers, it’s best to make dishes that can feed a bunch of people easily. This dip is super simple buffalo chicken yumminess and this chicken risotto is a perfect cold weather dinner. Enjoy!

Buffalo Chicken Dip

Ingredients:

1 lb Buffalo-style roasted chicken breast, shredded

1 cup Monterey Jack cheese

1 cup shredded Pepper Colby cheese

1 cup blue cheese dressing

1/2 cup blue cheese crumbles

8 oz cream cheese

Directions:

Preheat conventional oven to 350°F.

Mix all ingredients together.

Spread into a 9 x 9-inch pan or 2-quart baking dish.

Bake 30 minutes, until bubbly. Serve warm with tortilla chips and celery sticks.

 

Stove-Top Chicken Risotto

Ingredients

2 chicken breasts cut to 1 inch cubes, seasoned with salt and pepper

1 diced onion

1 bell pepper, bunch of asparagus, or other veg, diced

2 1/2 cups arborrio rice

2 packages chicken stock

3 tbsp butter1 cup water

Parmesan Cheese, optional

Instructions:

Heat a large pan or ceramic dutch oven over high heat.Add 1 tbsp olive oil.When oil is shimmery, add diced chicken.Cook until browned on all sides.Add diced vegetables.When vegetables are slightly browned, add butter and stir.Lower heat to medium-low and add riceLet rice brown Add a little bit of stockStir frequently until rice thickens.Add a little more stock until it is just barely liquid. Repeat stirring frequently until thickened and adding just enough stock to keep it from burning or becoming too thick.When risotto is thick enough to not spread all over a plate, but not so thick you can shape it like mashed potatoes, it is ready.Grate fresh parmesan cheese over the top and enjoy!

Healthy Breakfast Sandwich

Ingredients:

1 slice whole wheat toast

2 tbsp guacamole

1 large egg

Instructions

Heat whole wheat toast in the toaster until slightly crisp

Crack egg and panfry on high to liking

Spread guacamole on toast and place egg on top
